TUNA + BROWN RICE LUNCH LOAF
425g tin tuna in spring water (can use salmon)
1/4 cup spring onions (diced)
250g pouch microwave brown rice and quinoa
1/2 cup cheese
1/2 cup grated carrot
1 tbs wholegrain mustard
1 tbs fresh parsley
Salt + pepper
French onion hummus
Microwave rice. Add rice plus all other ingredients to a bowl and stir to combine.
Pour mixture into lined baking tray. Bake for 20 minutes at 180 degrees celcius or until golden brown.
