HEALTHIFIED PAD THAI
150g pad Thai rice noodles.
300g chicken breast (raw weight)
1 shallot diced
2 tsp minced garlic
1 tsp minced ginger
3 tbs spring onions
4 tbs rice wine vinegar
2 tbs soy sauce
4 tbs fish sauce
3 tbs coconut sugar
Cook noodles as per packet directions.
Mix sauce ingredients in a bowl.
In a wok add olive oil & cook ginger, garlic, shallot, spring onions & chicken.
Remove chicken. Cook eggs for a few minutes in wok.
Add chicken, egg, noodles back into wok and pour over sauce. Cook for a few minutes.
Squeeze over juice 1/2 lime.
