HIGH PROTEIN #PASTRYFREE LOW CARB MINI QUICHE CUPS
6 x slices of high protein bread ( I bought mine from@aldiaustralia)
3 x eggs
100g grated zucchini
1 tbs almond milk
2 tbs chives or parsley
3 x cherry tomatoes
Take one slice of bread, cut off crusts. Roll out flat. Press into a 6-hole muffin tin.
Spray top of each with cooking spray and bake for 10 mins at 170 degrees.
In a jug combine all other ingredients and stir to combine.
Pour quiche filling into each toast cup. Top each one with a sliced tomato.
Bake for 20 minutes or until quiche filling is set.
