One Pan Fried Rice with Brown Rice & Quinoa

Ingredients
2 tsp minced garlic
1 tsp minced ginger
1 cup peas
40g lean ham
1/4 cup soy sauce
1 cup chicken stock
1/4 cup spring onions
1 cup sliced carrot
300g cooked and shredded chicken
240g packet microwave brown rice quinoa
2 eggs
Directions
Spray a baking tray. Add all ingredient to pan (except eggs) and mix
Bake in oven for 15 minutes
Remove from oven. Crack 2 eggs on top. Cover with foil and bake for another 10 minutes until eggs are cooked
