Pumpkin & Brown Lentil Veggie Patties
PUMPKIN + BROWN LENTIL VEGGIE PATTIES

Ingredients

2 x cups cooked pumpkin

1 x 400g can brown lentils

1 x egg
-
1 tsp minced garlic
-
1 + 1/2 cups chopped greens

1 tsp smoked paprika
-
1 cup rice or quinoa
-
1 cup panko breadcrumbs

Salt + Pepper to taste

1/4 cup cashew nuts
Directions
Add all ingredients to a food processor and blitz to combine. Roll into patties.
Put in fridge for 30 minutes.
Add 2 Tbs olive oil to a pan and cook each pattie until golden brown.
Serve with a green salad + sweet chilli sauce and cream cheese.
Recipe Note
To finish off my 3 x day prep I’ve added fresh fruit and some @treatrawself_australia peanut butter protein balls and nuts. Yum!
