Veggie & Quinoa Slice with Beetroot Hommus
VEGGIE + QUINOA SLICE WITH BEETROOT HUMMUS
350 grams pumpkin
1 red onion
1 grated zucchini (drain )
1 cup roasted capsicum strips (diced)
1/2 cup almond meal
2 tsp garlic
1 tbs extra virgin olive oil
1 tbs wholegrain mustard
240 gram packet microwave quinoa
2 tbs parsley
Salt + pepper
Microwave or roast pumpkin.
Add oil to a pan and cook garlic + onion.
Add all other ingredients to a bowl, stir to combine.
Pour into lines baking tray. Cook at 180 degrees celsius for 30-40 minutes.
Serve with beetroot hummus.
