Crispy GF Chicken Nugget & Kale Salad
CRISPY GF CHICKEN NUGGET + KALE SALAD
300g chicken mince
1 carrot grated
1 zucchini grated (squeeze moisture out)
2 cups gluten free corn flakes@freedomfoods
1 tsp of your seasoning powder of choice. I used@mingleseasining garlic + herb
1 tsp minced garlic
1 onion diced
Add all ingredients to a bowl except the cornflakes and seasoning powder. Stir.
In a snap lock bag crush the corn flakes and seasoning to make a crumb.
Roll chicken mixture into balls and toss each ball in the crumb.
Spray each nugget with cooking spray and place on lined baking tray.
Bake at 180 degrees for 30-35 minutes.
For the salad mix together kale, parmesan cheese, salt, pepper, olive oil.
