LOADED VEGAN VEGGIE PATCH NACHOS WITH CRUNCHY WHOLE WHEAT CHIPS
1 can diced tomatoes
4 cups kale
2 tsp minced garlic
I head of broccoli
2 cups of spinach
1 can tomato soup
3 tbs sweet chilli sauce
1 x macro vegetable protein from @woolworthsau (prepared as per packet instructions)
3/4 cup vegetable stock
Brown onion + garlic in a pan.
Blitz kale, broccoli + spinach in food processor.
Add veggie mix to pan.
Add the rest of the ingredients.
Turn down heat + simmer for 5 minutes.
1 x packet of @mountainbreadau wraps cut into small triangles. Spray chips with olive oil spray, sprinkle with sea salt and bake at 170 degrees for 10 minutes.
Layer your crunchy tortilla chips, vegetable nacho mix, melted vegan cheese, + fresh diced tomatoes.
Add a huge dollop of @coyo_organic for a creamy topping that tastes just like sour cream!
