ONE PAN BAKED PUMPKIN GNOCCHI
300g of a store bought packet gnocchi
2 1/2 cups pumpkin sliced
1x 400g tin brown lentils
1/2 tsp nutmeg
3/4 cup cheese of choice
2 egg yolks
2 cups almond milk
2 tbs of sage
1 tbs olive oil
Salt and pepper
Cook gnocchi as per packed instructions and drain.
In a bowl add sliced pumpkin and olive oil. Add egg, gnocchi, almond milk, half cheese, nutmeg, sage and drained and rinsed lentils.
Pour mixture into a lined baking dish + sprinkle with the other half of the cheese.
Bake at 180 degrees Celsius for 40 -50 minutes or until golden brown.
