One Pan Loaded Beef Taco Bowls
ONE PAN LOADED BEEF TACO BOWLS

Ingredients
2 tbs olive oil
1 onion diced
2 tsp minced garlic
1 red capsicum
300 grams lean beef mince
1 packet taco seasoning ( old El Paso)
1 x 420g can black beans
1 x 420g can diced tomatoes
pre cooked rice 250 gram packet ( I used @unclebens coconut rice sachet)
1/2 cup grated cheese
Directions
In an oven safe frying pan add olive oil, garlic + onion. Cook until brown.
Add diced capsicum and lean beef mince and cook.
Add tin tomatoes, black beans + taco seasoning.
Add black beans and add rice. Stir through.
Top with cheese. Bake in the oven at 180 degrees until cheese is melted.
Recipe Note
Top with diced tomatoes, sliced avocado and Greek yoghurt.
Note: leave beef mince out for a plant based option.
