Ingredients
1 onion diced
2 tsp minced garlic
1 tbs oregano
400g tin diced tomatoes
1 grated zucchini (squeeze water out)
1/2 red capsicum diced
1/2 cup passata
425g tin tuna
1 egg
1 tbs lemon rind
375g light ricotta
120g lasagna sheets (around 8)
50g light cheese
1 tsp stevia
Directions
In a pan cook onion, garlic, zucchini & capsicum.
Add passata, tomatoes, tuna, stevia and herbs.
In a bowl mix ricotta, egg, lemon rind, salt/pepper.
Spray a baking dish. Layer up lasagne sheets/tuna tomato mix and ricotta mix.
Top with cheese and bake at 180 degrees celcius for 40 minutes.
