Ingredients
Muffins
1 1/2 cups self-raising flour
1/2 cup rolled oats
1 tsp cinnamon
1 tsp vanilla
1/2 cup stevia
1/2 tsp bi carb soda
1 egg
1 & 1/4 cup almond milk
1/2 cup melted coconut oil
150g blueberries
Filling
70g store bought lemon curd
60g light cream cheese
Directions
Add all ingredients to a bowl & stir to
combine.
Line a 6 hole muffin tin and spoon in mixture (can use 12 hole tin and make them smaller also).
Bake at 175 degrees celcius for 20-25 minutes.
Filling
Poke a small hole on top of each muffin and
spoon in lemon curd filling mix.
