Mix all ingredients together and bake at 180
degrees for 12 mins. Let the cake cool completely before slicing.
Chocolate/Coconut coating
Melt choc and ghee together over a pot of
simmering water. Coat the cake in choc mixture then roll in coconut. Place in
the fridge until chocolate has set.
Chia jam
Simmer
all ingredients together in a saucepan for 10 mins.
Set aside to cool (the chia seeds will continue to swell and thicken the jam).
Layer the jam between the cake & can even add some cream for extra WOW.
