30g vanilla @happywayau
5g baking powder
1 tsp bicarb soda
25g coconut flour
20g almond meal
20ml @niulife ghee or coconut oil
1 large egg
80ml @sogoodau almond milk
100g @rumblespaleo choc rocks or dark choc
10ml @niulife ghee or coconut oil
1/2 cup shredded coconut
1 cup strawberries/raspberries
2 tbs water
2 tbs chia seeds
1-2 tsp @nuviaproducts stevia to taste
Mix all ingredients together and bake at 180 degrees for 12 mins. Let the cake cool completely before slicing.
Melt choc and ghee together over a pot of simmering water. Coat the cake in choc mixture then roll in coconut. Place in the fridge until chocolate has set.
Simmer all ingredients together in a saucepan for 10 mins.
Set aside to cool (the chia seeds will continue to swell and thicken the jam).
Layer the jam between the cake & can even add some cream for extra WOW.
