ROASTED RED CAPSICUM + CHUTNEY SAVOURY MUFFINS
2 1/2 cups self raising flour
1 cup grated zucchini
1/4 cup chutney
1/4 cup chives
1 x cup red capsicum diced (in jar)
3/4 cheese of choice
1/2 cup extra virgin olive oil
1 cup almond milk@sogoodau
1 tsp stevia
1 tbs pepitas
Add all ingredients to a bowl and stir to combine.
Pour mixture into a lined 6-hole muffin tin. Top each muffin with pepitas.
Bake at 180 degrees celsius for 20- 25 minutes.
