Banana Bread Pancake Tray Bake with GF Gingerbread Crumble
BANANA BREAD PANCAKE TRAY BAKE WITH GF GINGERBREAD CRUMBLE
3/4 cup plain flour
1 tsp vanilla
3 scoops@happywayau vanilla protein (90g)
1/2 banana sliced
2 - 3 gluten free ginger nut biscuits ( crush into a crumb)
1 1/4 cups buttermilk ( can make a dairy free option with 1 cup almond milk and 1 tbs lemon juice)
1/2 tsp bicarb soda
1 tsp baking powder
In a bowl mix flour, bi carb, cinnamon, baking soda, happyway powder.
In a separate bowl mix buttermilk, egg, vanilla.
Combine both together and pour into a lined baking tray.
Push the sliced banana into the top of the pancake.
Bake at 170 degrees for 15 minutes.
To serve: top with greek or coconut yoghurt and gingerbread crumb.
