Directions
In a bowl mix plain flour, bicarb, baking
powder, cinnamon, nutmeg and @happywayau.
In a separate bowl mix the
buttermilk, egg, vanilla and grated carrot.
Pour buttermilk mixture into flour mixture and
combine.
Line a 3cm deep slice tin with baking paper.
Pour in pancake batter and add walnuts, extra
grated carrot and small blobs of light cream cheese on the top and bake at 180
degrees celsius for 15 minutes.
Serve with greek or coconut yoghurt.
