CRISPY + GOLDEN CORN CARROT + ZUCCHINI FRITTERS
1 zucchini grated
1 125g tin sweet corn
1 cup grated carrot
2 eggs (or 2 tbs olive oil )
1/2 cup SR flour (I used gluten free)
1 teaspoon sweet paprika
1 tsp crushed garlic
4 spring onions
1 tbs chives
Mix all ingredients in a bowl.
Heat oil in fry pan + add about 1/3 cup batter to the pan. (for each fritter)
Cook for about 3 minutes each.
Continue process with remaining batter.
Serve with 2 x boiled eggs and Coconut or Greek yoghurt. If made as a #mealprep recipe just reheat in the microwave before serving. Enjoy!
