SUMMER FRUITS CITRUS CRUMBLE
1 tsp lemon rind
Juice of 1/2 orange
1 Tbs pepitas
2/3 cup almond meal
1-2 tsp @natvialiving stevia
1 tsp cinnamon
Dice up the plums, nectarines and peaches add to a bowl.
In a separate bowl mix lemon rind, orange, Pepitas , Almond meal, Stevia, cinnamon.
Spray a small baking dish or ramekin with cooking spray.
Add the chopped fruit to the bottom of the dish and crumble the almond meal mixture over the top.
Bake at 175° for 20 minutes.
Top with coconut yoghurt and extra pepitas.
