RED LENTIL PASTA WITH CREAMY SUNDRIED TOMATO SAUCE

300g chicken ( can leave out if you prefer)
150 grams of @sanremo red lentil pasta
1/2 cup cashews
1 red capsicum
1/2 cup s/dried tomatoes
1 tsp garlic
1 tsp onion powder
1/2 tsp garlic powder
2 cups spinach
A bunch of fresh basil
Cook red lentil pasta as per packet directions.Dice the chicken breast and cook in a pan until golden brown.
Add all other ingredients, except the spinach to a blender and blitz to combine.To a bowl add the cooked chicken, red lentil pasta, sauce and then stir through the spinach.
