LIME + CHILLI FISH SCHNITZELS
2 tbs wholegrain mustard
2 tbs dill
Salt + pepper
1/3 cup plain flour
Juice of half a lime ( or lemon)
250gram packer of fish fillets OR 425g tin tuna or salmon
1 tsp sweet chilli sauce
1/3 cup almond meal
Combine eggs, mustard, sweet chilli, lime juice, dill, flour, almond meal, salt and pepper in a bowl.
Add tuna or chopped fish fillets to bowl and mould into 4 patties.
In a pan add 2 tbs olive oil and cook each schnitzel on both sides until golden brown.
Zesty Yoghurt Dressing
Mix 1/2 cup greek yoghurt, 1 tsp garlic, 1 tbs lemon juice .
