Smokey Lentil Pita Pockets
SMOKY LENTIL PITA POCKETS
1 x 400g can chickpeas (rinsed + drained)
1 onion diced
2 tsp garlic
2 tsp smoked paprika
1 x tin brown lentils
1 tbs @mayvers tahini
1 tbs lemon juice
1 cup almond meal
2 x wholemeal pita pockets (cut in half)
Salt and pepper
1/2 cup panko (roll the patty in at end)
Add olive oil to a pan. Cook onion + garlic.
In a food processor blend chickpea, onion mix, lentils, almond meal, tahini, lemon juice, salt and pepper, paprika.
Shape into patties. Roll each patty in panko breadcrumbs. Chill in fridge for 30 minutes.
Cook patties in pan until golden on both sides. Patties will harden as they cool.
Serve with fresh rocket, tomatoes + hummus or vegan mayo.
